Ingredients
For the base
50g amarettini biscuits
25g soft butter
 
For the apple layer
250g apples Südtiroler Apfel PGI (Fuji variety)
25g sugar
½ tbsp lemon juice
½ tsp vanilla paste
1 tsp vanilla pudding powder  

For the cream
50g mascarpone
125g curd cheese (20%)
50g whipped cream
1 tsp vanilla paste
1 tsp lemon juice
1 ¼ tbsp sugar

For the decoration

1 tbsp lemon juice
1 tsp vanilla paste
2 tsp vanilla pudding powder

100g mascarpone
250g curd cheese (20%)
100g whipped cream
2 tsp vanilla paste
2 tsp lemon juice
2 ½ tbsp sugar

1kg apples Südtiroler Apfel PGI (Fuji variety)
100g sugar
2 tbsp lemon juice
2 tsp vanilla paste
4 tsp vanilla pudding powder  

For the cream
200g mascarpone
500g curd cheese (20%)
200g whipped cream
4 tsp vanilla paste
4 tsp lemon juice
5 tbsp sugar

Recipe: cake made with South Tyrolean apples and vanilla
Preparation
For the base
  • Crush the amarettini biscuits and knead them into a crumble with the soft butter.
For the apple layer
  • Peel and dice the apples, then cook them until tender and soft in a nonstick pan together with sugar, lemon juice and vanilla paste.
  • Remove 1-2 tbsp of the liquid and mix it with the vanilla pudding powder.
  • Add the mixture to the apple pieces and simmer for about 1-2 minutes.
  • Transfer the apple pieces onto a plate and leave it cool.
For the cream
  • Whisk the mascarpone, curd cheese, vanilla paste, lemon juice, sugar and whipped cream together until it’s creamy.
Then
  • Divide the amarettini crumble into different glasses.
  • Place the apple pieces on top (set aside 2 tbsp for decoration) and press down a little.
  • Spread the cream on top.
  • Decorate with apple pieces, whole and crumbled amarettini.
  • Store in a cool place until ready to eat.
